The Hôtel de glace de Québec, which is celebrating its 25th anniversary this year, and the Château Frontenac are joining forces to build and operate a restaurant in the snow and ice.
On Fridays and Saturdays, from January 17 to March 15, 2025, 52 people per service will be able to enjoy a three-course meal under a dome frozen by the cold.
On the menu, there will be dishes that are both warming and upscale, such as a soup en croute with foie gras and porcini mushrooms, beef ribs cooked for seven hours and their accompaniment of celery root mousseline, then a dessert in snowball shape, but with tropical flavors. Vegetarian versions of the starter and main course have also been created.
It will be possible to book a package at $225 (plus taxes and service) per person, which includes round-trip transportation between Château Frontenac and Valcartier, a cocktail and a visit to the Ice Hotel, with its impressive rooms and sculptures.
