With its flowery rind, its nutty aromas and its heart creamy, it is the most famous pyramid of the Brenne (Indre). “It’s a goat’s cheese which is very pleasant. To unlock its secrets, you have to get up early, like Wilfried Falcotet. Start of daily milking of its 130 goats. For him and his wife, breeding was not easy.
Unique know-how
Once milking is complete, the rest takes place in the laboratory. The milk is mixed with rennet to form the curd after 24 hours. It is then placed in well-filled molds to be drained for another 24 hours. This process finally gives it its pyramidal shape, the origin of which remains a mystery. Then head to the dryer, before completing the transformation. The chef of the Auberge du Grèbe, Fédéric Berthaudnoted : “Every season, we try to find a new idea to present our products, from our territory.” The restaurant’s customers are charmed. THE Pouligny Saint-Pierre benefits from a protected designation of origin (PDO) since 2009.
