Brebis, a new addition on Fairmount Street, promises to fill the bellies of Quebec cheese lovers. The two young enthusiasts who run the cheese factory want to democratize cheese, without pretension and in complete conviviality.


It is Gabrielle Lett, 27 years old, and Fabien LeBlanc, 24 years old, who are behind the project. The two friends cut their teeth with Max Dubois, at L’Échoppe des fromages in Saint-Lambert – “A model! », they exclaim. “We wanted to stand on our own two feet in the field,” adds Gabrielle Lett.

The store came together around the idea of ​​being a showcase for Quebec products and, in particular, sheep’s and goat’s cheeses, their favorites. “The goal is to offer alternatives to French and European cheeses that everyone already knows,” says Fabien LeBlanc. The Brebis stalls are therefore filled with cheeses, charcuterie and fine products, all from Quebec, and soon with Quebec wines. The boutique also offers sandwiches to satisfy a craving and cheese platters for all occasions (which can be reserved in advance).

“We’re going to advise both connoisseurs and people who don’t know anything about it, and we want to make it accessible to young people,” says Fabien LeBlanc. By settling next to Mile End institutions, the two owners hope to carve out a place among the many essential stops in the neighborhood, and of course, develop a special relationship with their neighbors.
