The French take time for lunch, even for a sandwich: 50 minutes on average, according to a study. Fast food has evolved, and now offers snacks that are surfing on trends.
The major innovation trend this year, at the show dedicated to fast food, is all-vegetable. Wheat and sunflower proteins replace meat. “It’s very amazing. It really looks like meat”, confides an enthusiastic visitor. The lounge is surfing on the vegan wave, with fake vegetable lardons or bacon made with legumes. Three years were needed to create the product. “These products are intended for all gourmets, all good food, both meat lovers and vegans”assures Thomas Hug de Larauz, commercial director of La Vie.
Innovations will have to find their place on the shelves. “The plant-based alternative is meeting an audience today: 60% of consumers who eat less meat. So it’s destined to stay, and to last”, explains Nicolas Nouchi, catering specialist and manager of CHD expert. Among the novelties, there are blue, white, red burgers with vegetable dyes for match nights, but also a CBD drink, a legal cannabis. A total of 200 innovations are presented at the show.
