Enjoying an ice cream is one of the little pleasures of the holidays. Everyone has their own taste in perfume. There are of course the traditional chocolate, strawberry and vanilla flavors, but you can also find sesame, bergamot, or pickles. It’s the new fragrances that are popular.
The star of the summer is of course the ice cream. It comes in a cone, in a cup, with one or more balls. New flavors have recently emerged, such as ginger or flowers. The traditional chocolate, vanilla and strawberry flavors still represent 80% of sales, but are gradually losing their share with exotic flavors.
“There are trends too, like in fashion. We like when there is crunch, different textures. For us, it follows the kitchen in general. As the pastry is only evolving, the ice cream is also evolving“, says Joel Ulbrichcooler. Some go very far, as with the pickle flavor. More and more pastry cooks and restaurateurs are daring to create original combinations. Mushrooms, hay, foie gras… them ice cream flavors have no limits.
