After the hail that devastated the operation and the drought of the moment, Au Panier Frais de Mimbaste luckily the squash resisted at our market gardeners. Squashes of about twenty different varieties, each one more beautiful than the other. Squash to make au gratin, mashed potatoes, crumble, soup,… but also in cake. This is Virginie Cazaurang’s proposal of the day.
Butternut squash and chocolate cake
A treat, a delight this cake. Soft and tender at the same time. To make it Virginie, even if she is in organic farming, removes the skin from her butternut squash. Here is the recipe in detail;
Ingredients:
- 400g butternut squash
- 200g chocolate
- 4 eggs
- 40g hazelnut powder
- 2 tsp baking soda
- 30g of sugar
- 1 pinch of salt
Steam the butternut cut into pieces. Melt your chocolate and mix it with the butternut (mixing in a food processor will be easier with a smooth result). Then add the eggs, hazelnut powder, baking soda, sugar and pinch of salt. You can mix everything in a food processor if you wish. Preheat the oven to 180 degrees. Butter your mold, pour the mixture and bake for 30 minutes. You can after cooking decorate the cake with hazelnuts for example. Free rein to your imagination.
