Michel Guérard, memory of French cuisine, a book published by Editions Albin Michel. In the book, everything is true but everything sounds like a novel. We begin with the childhood of a village boy, who grows up in the shadow of the family butchery, in an era troubled by war and a certain poverty. We follow him in his apprenticeship, at 16 years old in pastry. And then very quickly, it’s Paris and an original career in the cabaret le lido before setting up his first business, the pot-au-feu. In this popular neighborhood bistro, he first cooks for the workers, the little thugs before being singled out by a renowned culinary critic who will attract him a clientele of gourmets. Oh yes ! Michel Guérard is the owner of the hotel-restaurant Les Prés d’Eugénie in Eugénie-les-Bains, which has had three Michelin stars since 1977. Michel Guérard is considered one of the founders of “new cuisine”.
