MELON-CHEESE COCKTAIL
The melon should always have a nice texture and should never be translucent – if it is, it is no longer good and should not be eaten.
*do not discard the pips but mix them then drain to recover the juice to offer with a muscat or walnut wine.
The cheese used can be feta or mozzarella or blue cheese or fresh cheese, etc.
Per person :
2 slices of peeled and seeded melon*
2 tbsp of cheese
2 to 3 drops of lemon juice
+optional, thinly sliced ham
Pepper
3 sticks of carrots for decoration
Cut the melon into cubes, place them in a bowl with the lemon and place in the freezer for 30 minutes. Unless fresh cheese is chosen, mix the other cheeses with a little water or milk. Mix the ham. Take the melon out of the freezer and blend it, combine the ham and blend together. Place back in the freezer while you prepare and serve. 5 min before serving, take the melon out of the freezer, blend it then fill a cup, pour the cheese over it, season with pepper, decorate and serve.
