William Berthold, nurseryman and creator of “Saveurs Vivaces”, offers his customers the opportunity to grow perpetual vegetables. These are plants that grow back all year round, and which are perfectly adapted to climate change.

William Berthold, nurseryman and creator of “Saveurs Vivaces”, arranged to meet the France Télévisions teams at the Château de La Roche-Guyon (Val-d’Oise) for a plant fair. Soup chrysanthemum, Korean celery, sea chard: he grows perpetual vegetables. These are plants that grow back all year round, and which also adapt to the climate. Customers appreciate it. There is no need to replant these perennial plants. They almost manage on their own in the garden.

Three years ago, William Berthold decided to get started with the support of his partner, Julie Pellerin. To make a living from his passion, he has just set up in a nursery in Tremblay-sur-Mauldre (Yvelines), where there are around fifty plants. They have a major advantage, since they are perfectly adapted to climate change. “They are more deeply rooted in the ground, so they will seek water deeper. They will be more resistant, overall”, he explains. To introduce his vegetables, William Berthold also works with great chefs.
