Maple cake, apples and dune pepper

Ingredients

4 apples, peeled and sliced ​​(about 300 g once peeled and sliced)

15 ml (1 tbsp.) cider vinegar

250 ml (1 cup) unbleached all-purpose flour

60 ml (¼ cup) wholemeal flour

7.5 ml (1 ½ tsp) baking powder

2.5 ml (½ tsp) salt

2.5 ml (½ tsp) ground dune pepper

125 ml (½ cup) melted butter

125 ml (½ cup) maple syrup

125 ml (½ cup) lukewarm milk

1 egg

5 ml (1 tsp.) sweet clover essence

30 ml (2 tbsp.) maple sugar or maple nuggets

Preparation

1. Preheat oven to 180°C (350°F) and grease a 9- or 10-inch springform pan or cast-iron skillet of the same size.

2. In a bowl, add the vinegar to 250 ml (1 cup) of water, and add the apples as they are sliced. To book.

3. In a small bowl, combine the flours, baking powder, salt and dune pepper. To book.

4. In a large bowl, beat the melted butter with the maple syrup and the milk. Add the egg and sweet clover and beat again.

5. Add the dry ingredients to the wet ingredients and mix with a spatula.

6. Pour the preparation into the buttered mould.

7. Spread the apples on top, pressing them lightly into the mixture.

8. Sprinkle the maple nuggets on top and bake for 55 to 60 minutes, or until the center is set.

9. If desired, add more maple nuggets right out of the oven. Enjoy cold or lukewarm.

Good to know

Dune pepper looks like long pepper, but it is actually late alder catkin. Its taste is reminiscent of pink pepper with a slight touch of citrus and a floral and resinous side that is reminiscent of the boreal forest where it comes from. Once ground, it is used as pepper in our recipes.
