Mango millefeuille and cardamom pastry cream

To cook like a chef, here is the list of ingredients for 6 people and the recipe to follow step by step!

Ingredients

– 1 roll of puff pastry

– 2 mangoes

– 4 eggs

– 60 g of flour

– 300 cl of milk

– 80 g of sugar

– 1 teaspoon of cardamom powder

Preperation

Wash and peel the mangoes, cut them into brunoise, sauté them in the pan then sprinkle them with sugar.

Using a cookie cutter, cut out 12 rectangles in the puff pastry then sprinkle with icing sugar. Bake them between two hotplates at 200°C for 10 minutes.

To make the mousseline, bring the milk to the boil, whiten the young with the sugar and the cardamom powder. Add the flour, pour the hot milk and return to cook on the heat for a few minutes. Remove to a container, film in contact then leave to cool.

Dressage

On a rectangle of puff pastry, place the cream in a piping bag and the mango brunoise. Sprinkle with turmeric and return a rectangle.
