If you’re making wine with blueberries and honey, why not try your luck with maple water? said the owner of the Domaine Acer sugar bush to himself when he discovered certain elixirs from Quebec. In 1990, he launched his maple-wine project with, as a laboratory, a family land welcoming 7,000 maple trees. Six years later, he received the first license for the artisanal production of maple-based alcoholic beverages in Quebec. The idea was ultimately far from crazy.

Vallier Robert’s know-how was refined during journeys in the Napa Valley, in California, and in several regions of France, including Champagne. This quest then enabled him to develop a white sap wine, an eau-de-vie, an aperitif and a sparkling wine.

Made according to the traditional method, from the vinification of a wine to which maple syrup and yeast are added for fermentation, the Mousse des Bois is one of the intriguing variations of the house’s range of alcoholic products. . Its fine and abundant bubbles, its slight bitterness and its brioche taste make it a distinct product. The Mousse des Bois is available in two versions: a dry brut at 7 g, more fruity with a note of maple on the finish, and a very dry and floral brut zero to which are added aromas of undergrowth. To be enjoyed as a mimosa at brunch, as an aperitif or as a cocktail with gin and a dash of lemon juice, or as an accompaniment to smoked salmon and oysters.

The Mousse des Bois contains 12% alcohol and is available in three sizes. Price: starting at $ 17 for 375 ml, online and at select points of sale.
