To change a bit from the traditional tagines with vegetables, chicken and olives or prunes or even apricots, Mama from the Moroccan cuisine restaurant Chez Mama in Saint-Perdon (only on order to take away) offers us the legume tagine. A tasty tagine made with chickpeas, black beans and garnished with rice, peas, sweet Landes pepper, carrots and onions. To pick it up, Mama uses cumin, paprika, black pepper, turmeric but also a small stick of cinnamon, cardamom, fresh ginger, garlic and of course fresh mint leaves, parsley and coriander. She explains the recipe step by step by listening to the broadcast of the day.
To accompany it Mama makes her own bread to perfection, a French bread with a mixture of wheat flour, wheat and corn and very little yeast. She makes her dough the day before for good growth at room temperature.

  • a teaspoon of good green tea
  • sugar
  • fresh mint leaves

Rinse your green tea and place it in the filter of your teapot. Add sugar to your liking and serve piping hot.
If you let the tea steep for a long time, watch out for bitterness. To avoid this inconvenience, you can pour your whole thing into a second teapot.
