Johan Laval’s secret to making a great New Year’s Eve meal is to keep it simple but with good products and a touch of sweet and savory. A beautiful poultry bought from a local producer; forgotten vegetables such as butternut, patisson, Jerusalem artichokes or even parsnips; and gingerbread to add in small pieces to the gravy. A traditional and classic recipe revisited by the chef of Maison de Mézos, Johan Laval.
