La Maison Cazelle de Dax enters Culinary College of France with its tasty madeleines

Crunchy but also soft, melting and addictive, Madeleine de Dax takes you by the feelings. Inimitable and irresistible, it is the result of the unique know-how of the Cazelle family for five generations. Maison Cazelle, founded in 1906, has continued to produce, according to a secret recipe, this famous madeleine that is unlike any other. The madeleine of Maison Cazelle, a madeleine of Proust? No, well beyond, a treasure! A treasure which is therefore entering the Culinary College of France.

At the origin of this little gem, Antonin Cazelle. He does his military service in Commercy and becomes butler of a family of notables in which the grandmother gives him the recipe for his madeleines. On his return to Dax he adapted this recipe and made it his specialty. Far from the industrial product that Madeleine de Commercy has become today, Madeleine de Dax remains an authentic, artisanal product made day by day. Daily surpluses are donated to local associations.

Sébastien Cazelle quickly understood the importance of taking over the family business with his brother Clément. So it’s off again for a trip to the Cazelles. Certainly to the delight of parents and grandparents. And then we must note the desire, the passion of Sébastien and Clément, two brothers with smiles as inimitable as their madeleines.
