Head to Korea thanks to the flavors and scents of its cuisine. Korean gastronomy is also known to be very healthy, because it relies on fermentation.
Colorful, spicy and tangy, Korean cuisine is sweeping across France. After cinema and music, the French are passionate about this Asian gastronomy, with very varied recipes. In Paris, customers flock to a Korean fried chicken chain at lunchtime. The brand, which has nearly 400 establishments around the world, is targeting 25 openings in France within five years. The craze is such that supermarkets have emerged.
The art of fermentation
To get started, it is possible to enter a workshop and discover fermentation, the basis of Korean cuisine, with an expert. On today’s menu, kimchi ravioli. The first step is the meticulous brining of the cabbage. “Kimchi can be kept (…) for up to two months, there is no problem”, assures Jean Lee, the founder of the Korean delicatessen Misikga. For the filling, a mixture of vegetables is used to stuff the fermented cabbage. Everything is then placed in a jar for three days. Through the seventh art, TV series and restaurants, Korean culture continues to be exported.
