Tarama: is its pink color natural?

The tarama is spread deliciously on small toasts during festive meals. Sold for around twenty euros per kilo on average, this Greek appetizer comes in several shades of pink. But what is it made of?
The tarama production secret is well guarded by manufacturers. According to Andreas Mavrommatis, Greek chef-restaurateur, the recipe is very simple and only has five ingredients: cod roe, bread crumbs, sunflower oil, and lemon and olive oil. However, the dough obtained by the chef is white, unlike that sold in supermarkets. Andreas Mavrommatis says that manufacturers add colorings to attract customers. Nutritionist Laurent Dufay affirms that the presence of wheat semolina in these recipes serves as a trompe-l’oeil.
Misleading the consumer with colorings
A large number of manufacturers transform certain products using coloring to attract consumers. Farmed salmon has gray flesh. “To color it, the majority of breeders feed them with pellets enriched with astaxanthin”, indicates Dorothée Lachaud, present on the set of 13 Heures, Tuesday January 16. Some colorings can be bad for your health, such as nitrites, a carcinogenic additive, used in cold cuts.
