Is Singapore preparing the food of the future? The answer can be found in a high-end butcher’s shop, which has been in business for 30 years. It is the first in the world to offer its customers meat grown in the laboratory. The director, Andre R Huber, sells his synthetic chicken for 4 euros each. Meat is made in vitro, from animal cells. “It’s the future, to grow chicken without having to kill an animal”he judges.
Stem cells grow in an incubator
At Good Meat, an avant-garde restaurant, it is served every Thursday. For ecological reasons, animal welfare or out of curiosity, a group of friends try the experiment. “The taste is good, but it feels a bit like eating a chicken that just went to the gym. The meat is less fatty”, comments a man. Chicken, beef or even crab in fritters, Singapore is betting on these food innovations.
