In the kitchen with Vahagn Stepanyan of the restaurant “Le Saint-Sulpice” in Saint-Sulpice-Les-Champs

Opened in April 2021, “Le Saint-Sulpice” is a restaurant with flavors from Armenia and Georgia. Homemade cooking and a unique cellar. Vahagn Stepanyan’s restaurant is a convivial table to get away from it all and have a good time with friends.

On the menu: pkhalis with spinach

The ingredients of the recipe for eight people:

  • 160 g of spinach
  • 50g walnuts
  • 1 clove of garlic
  • 1 lemon juice
  • salt, pepper and coriander

Chop the flat-leaf parsley. Next, cook the spinach for two minutes in salted boiling water. Drain with cold water. Squeeze the spinach to extract the excess water.

Chop spinach and walnuts finely. Then, mix to obtain a homogeneous paste.

Form small balls. In each, place a few pomegranate seeds.

The recipe can be declined with red beans or beets. Serve as a starter. At table !
