On the menu this afternoon: confit pork belly

For nearly thirty years, “Le chant du monde” in Aubusson awakens your taste buds with local dishes, cooked in “Circuit court”. Behind the stoves, we are busy preparing authentic and tasty traditional dishes.

The ingredients of the recipe for four people:

  • 2 kg pork belly
  • 1 kg of lard
  • 10 g of juniper berries
  • 6 carrots
  • 1 bunch of flat-leaf parsley

Salt the meat. Then, in a large pot, add water and lard. Detail the garlic and an onion, pour the whole thing with the breast and a bouquet garni. Marinate overnight over low heat.

We work in “Short circuit”. The pork is supplied to us by Max, an Aubusson butcher

Drain the meat the next day. Then, leave to preserve for five hours at 150°C (th. 5).
