In Nançay (Cher), the baguette of Gabin Girault, baker and pastry chef, costs 1 euro, and the tradition, 1.20 euro, an increase of 5 and 10 cents. This is the first time in 14 years that its prices have increased. “Completely legitimate. And he should have even done it long before, surely”, confides a client. “Better a small increase than not having a baker”believes another woman.
Gabin Girault’s new prices are far from covering inflation. In his bakery, he saw manufacturing costs explode: + 20% for yeast, and + 40% for salt, among others. “Today, 100% of the products we use to make a baguette have increased”, laments the craftsman. However, he does not intend to raise prices again. “No one is ready to put 1.50 euros in a baguette. And we don’t want to sell a baguette for 1.50 euros”. The purchase of a less greedy oven would cost him 50,000 euros, but the banks do not follow. He then saves as much as he can, and has been closing the afternoons for a month. The bakers’ federation fears serial bankruptcies.
