The kitchens of the university hospitals of Strasbourg (Bas-Rhin) offer homemade dishes every day. They produce 3,500 meals a day, which must meet patient dietary restrictions. For six months, the menus of the CHU have changed in favor of a nutritional relief. The cooks use more ingredients and more fresh products, while concocting new recipes.

The new dishes are appreciated by patients at the hospital in Strasbourg (Bas-Rhin). “I’m strangely surprised, because these are dishes that are still tasty (…), it’s simple and it feeds well”, says Clara Rieger-Lambert, a patient. Meal leftovers are less numerous on the trays. “Someone who is not well, and who does not eat as a bonus, well, that cannot improve their condition at all”notes Elisabeth Strau, nursing assistant at the Strasbourg university hospitals.
