Several million poultry have been slaughtered in France in recent months, to to counter the avian flu epidemic. The producers of Périgord do not hide their concern and expect a shortage of foie gras, duck breast and confit.

Foie gras is an emblematic product of Périgord. It will soon be hard to find. Duck farms are affected by an epidemic of bird flu. In total, more than 500,000 ducks had to be euthanized in the Dordogne alone. “There will be a lot less foie gras, duck breast, confit available for everyone. It’s a big worry“, confides Romain Pestourie, duck breeder in Ladornac (Dordogne).

In Sarlat-la-Canéda (Dordogne), a producer has planned stocks to spend the summer, but will run out of “fresh duck breast” or of “fresh liver” from mid-July. The shortage worries the region, where many tourists come for the gastronomy. ” We are a little worried, yes. If we can no longer eat duck breast or all that, it will be annoying”, confides one of them. Some foie gras producers do not expect a return to normal before the start of 2023 .
