This is good news for lovers and for producers of truffles. A thirteenth controlled market will start on Wednesday December 1 in Montignac. From December 1 and until the last Wednesday in February, the Departmental Federation of Périgord Truffles will be installed from nine o’clock to twelve o’clock at the Priory of Montignac-Lascaux. But beware, for the opening of this first market on Wednesday, December 1, the opening will be at 11 a.m., in the presence of the Black Diamond and Gastronomy brotherhood.

This new Montignac market therefore joins the long list of the twelve controlled markets.: Sainte-Alvère (which starts Monday, November 29), Bergerac, Saint-Astier, Sarlat-la-Canéda, Saint-Geniès; Terrasson-La-Villedieu, Périgueux, Sorges, Excideuil, Thiviers, Brantome and Ribérac.

In controlled markets, truffles are washed, weighed, sorted by species and category. Only the best are on sale, and we know from which terroir they were extracted, and by which producer. It is insurance for consumers.
