Out of taste, ecological awareness or respect for animals, more and more English people have opted to ban products of animal origin from their diet. A lifestyle choice that has been developing for several years. Example in this extract from the magazine “We, the Europeans”.

Rare are the dishes that escape the vegan trend. Not even England’s national dish, Fish & Chips. At Hobson’s Fish & Chips in London, the traditional fish can be replaced by a preparation made from banana flowers. Add a few drops of soy sauce and “a seaweed”, says Ash Ergisi, owner of the restaurant.

Once dipped in a frying batter and immersed in boiling oil, we obtain the vegan equivalent of Fish & Chips, visually very similar. “It’s a tribute to the fish, explains the chef. Otherwise, this product really has no other purpose.”

“The demand keeps increasing”

If the culinary proposal meets its audience today, Ash Ergisi was not always confident about the success of the dish: “I was skeptical, I didn’t think people were going to want to eat it, he says. But the demand keeps growing. I feel like I’ve created an uncontrollable monster.” Vegan Fish & Chips now represents 15% of its sales. Some customers even cross the city to come to taste it. “It’s really delicious. I didn’t think it would look so much like Fish & Chips”testifies a German tourist who has not eaten fish for thirteen years.

But the replacement for this traditional dish has not yet conquered all the guests: “For me, a fish is a fish! I came to eat fried fish, expresses another customer. It’s weird, but if it makes some people happy, I wish them good luck, I hope they enjoy it.”
