Honey from the Cotentin marshes is born at nightfall. “We respect our animals and we have daytime temperatures that are very close to 30-35°C. If we took them in the middle of the day, unfortunately the hives would end up panicking and die”, believes Patrick Cholet, beekeeper for the Percheron black managers. A Norman beekeeper is installing three new hives on the land of a restaurant friend, because Patrick Cholet produces the chefs’ honey directly at home.

The bee lover discovered the pleasure of inventing honey at the age of 50. He then left his commercial position, not without struggling the first years. Today, his work is appreciated. He reserves his small production for 80 restaurateurs, three-quarters starred. In the kitchen, honey will give life to a Marsh Honey Moussette.
