The quintessential holiday drink, eggnog is a Christmas tradition for many families. This was the case with Catherine Draws when she was a child. “I started making it when I was little with my mother,” says the co-owner of BarBara Vin, a very versatile restaurant, open every day, from early in the morning until late at night, in the Saint- district. Henri.

Catherine Draws loves eggnog so much that it will be offered in an alcoholic version at BarBara for the holiday season. Her regulars (and there are many of them) will be able to taste this drink that she used to prepare at her old restaurant, the Lili. Co.

To the little cooks of Press, Catherine Draws offers the alcohol-free version that she prepares with her children. “My alcoholic eggnog is a little stronger on the spices, there is more nutmeg. Children are often more fans of cinnamon. I adjust the recipe for the little ones, but roughly speaking, it’s the same thing, ”she explains.

Eggnog by Catherine Draws

Yield: 2 liters

Ingredients

  • 6 egg yolks
  • 400 g (3 1/2 cups) sugar
  • 1 pinch of sea salt
  • 1/4 tsp. 1/2 teaspoon ground cinnamon (and a little more for serving)
  • 1/4 tsp. freshly ground nutmeg
  • 700 ml 35% cream
  • 700 ml whole milk
  • Candy canes (optional)

Preperation

  1. With a hand mixer, whiten the egg yolks with the sugar, salt, cinnamon and nutmeg.
  2. In a separate pitcher, combine the milk and cream.
  3. Incorporate the liquid into the first mixture, beating gently.
  4. Enjoy cold and without ice, with a little ground cinnamon sprinkled on top and, why not, with a candy cane to stir.

Keeps for 2 days in the refrigerator.
