A “comforting”, “gourmet” and “decadent” recipe. The few qualifiers used by Inès Gauthier to present her chocolate cake have everything to charm the little chefs. “It’s a recipe that is extremely easy to make. I often do it with my family, ”says the 16-year-old who opened her first restaurant in November in Quebec.

Located in the new Gourmet District, Mshe Inès – L’Atelier du hamburger offers “high-end burgers made with Quebec products […] tastes very different from each other, ”explains Inès Gauthier. Thus, on the menu, a more traditional burger is mixed with Korean, keto, vegan or Thai burgers. Fries, coleslaw, fried chicken and poutine are also served.

Inès Gauthier had been working on this restaurant project for more than two years. “With the pandemic, it really allowed us, my family and I, to do tests, to work on our products and our ingredients to really seek the best quality”, explains the one who, despite her young age, has already published two cookbooks.

At M’sshe Inès – L’Atelier du hamburger, “we are not trying to make fast food, we are trying to make fast good », She sums up.

Decadent Chocolate Cake

Preparation: 15 minutes

Cooking: 25 minutes

Rest: 1 hour

Yield: 8 to 10 servings

Ingredients

  • 250 g dark chocolate 75%
  • 150 g butter
  • 125 g of white sugar
  • 125 g brown sugar
  • 70 g of flour
  • 2 eggs

Preperation

  1. Preheat the oven to 400 ° F.
  2. Melt the butter and chocolate in a double boiler, mixing everything regularly with a wooden spoon.
  3. When the mixture is melted and homogeneous, remove the bowl from the double boiler and add the white sugar and brown sugar. Mix well.
  4. Then add the flour by sifting it and mix everything well with a whisk.
  5. Break the eggs into a separate bowl and whisk them well so that they are slightly aerated.
  6. Add the eggs beaten to the chocolate and the flour. Mix well with a wooden spoon.
  7. Line a round springform pan and pour the mixture into it.
  8. Lower the temperature from 400 ° F to 300 ° F then bake the cake for 25 minutes.
  9. Take the cake out of the oven and let cool for at least 1 hour.
  10. Serve with a scoop of vanilla ice cream, custard or fresh fruit. To give the cake a wintery feel, the little chefs decided to sprinkle it with icing sugar.
