Healthy seasonal salad with vegetables from Mélanie’s vegetable garden in Gaillères

Don’t pick up noon to 2pm! This is the message of the day from Mélanie Chesnais, Mélanie’s vegetable garden in Gaillères. Our market gardener always offers you her little recipe ideas to highlight her production and that of her producer friends like her. Today she offers us her healthy salad, her healthy salad. In this season the body needs to fill up with vitamins and it’s good nature always gives us what we need when we need it.

Lamb’s lettuce, radishes, carrots of all colors, walnuts, apples, red cabbage,… walnut oil, shallots, chives for the vinaigrette. Be careful to wash your vegetables well and keep the skin if possible where all these famous vitamins are.

Mélanie always offers you her recipes on Fridays on her Facebook page. For example, try the cauliflower soufflé, what a great idea! For this recipe you will need:

  • 1 cauliflower from Mélanie
  • 200g cottage cheese
  • 2 eggs
  • 40g Gruyere cheese
  • salt, pepper and nutmeg

Wash the cauliflower then steam it. Separate the egg whites from the yolks. Mix the cauliflower with the yolks and the fromage blanc. Season with salt and pepper and add the nutmeg and grated cheese.
Whip the egg whites until stiff and gently fold them into the cauliflower.
Butter your mold(s) and pour everything in.
Put in your preheated oven and cook for 25 to 30 minutes at 180°C. Do not open the oven door before the end of cooking, the soufflé will fall back.
