Don’t ask a chef to make you a simple squash or pumpkin soup, puree or other soup for a special Halloween cuisine. Alex Guigard, the chef at home in the Landes who comes to your home to treat you, has chosen the butternut gnocchi. Ah gnocchi, a dish that always pleases children. So for his gnocchi Alex tested several recipes and these are the “Butternut gnocchi with basil and lemon zest, roasted pistachios and parmesan cream” who win.
To make gnocchi like Alex, nothing could be simpler. Count 500 grams of butternut for 400 grams of flour.
You need to boil or steam your butternut squash and mash it. Add an egg yolk, flour, lemon zest and chopped fresh basil. Mix everything until you get a ball of dough that no longer sticks to your fingers. A dough that should have the consistency of pizza dough.
Then form a sausage and cut your gnocchi that you can shape as you see fit.
You just have to fry them in a pan in a little butter.
To accompany these homemade gnocchi, the chef makes a parmesan cream and roasts a few pistachios. When serving the hot dish, all that remains is to grate a little lemon zest for decoration!
At the tasting the result is top! Nothing to do with the gnocchi that we know, as nothing beats homemade.
