Close-up on a very trendy concept to revitalize city centers: build gourmet halls, on the model of what is already done in Portugal or Spain. A mixture of traditional market and restaurant in a lively atmosphere.
Saint-Etienne (Loire) has renovated its halls, historical heritage of the 19th century. It was the bet, successful, of the town hall and since the opening six months ago, they are always full. “The idea is to have a constitution that is half market trade, half catering with very local products”, explains Nathaly Dufour, manager of Halles Biltoki. And customers love it. It is a place that brings together all generations.
It’s a concept that appeals so much that a pastry chef even achieves 20% of her results above her forecasts. After three years of work and five million invested in work, the town hall believes that it has achieved its objective. Maintaining an attractive town center is also what Quimper (Finistère) intends to do. Because today, the old halls are out of breath, many unoccupied stands, a basement that is leaking. In the spring, the town hall therefore decided to move the halls. In France, several dozen food hall projects are currently under consideration.
