It is between Ayherre and Labastide Clairence that the Biotzeko Farm is located, a farm taken over in 2006 by Sylvain with the arrival of his wife Julia in 2014. Healthy and natural agriculture are values that for the couple have meaning they work tirelessly every day, raising sheep, making cheese, raising Basque pigs and even Pirenaika and Béarnaise cows. Biotzeko’s success is also the direct sale of its products such as verrines of pork or veal axoa, but also 5-kilo packages of fresh meat. Their productions can also be found in BIO stores and on the Biarritz market around Les Halles on Saturday mornings.
