It is in soule that we stop at the Goyhenetxia farm in Garindein, to receive 2 farmers in tune with nature.
They produce in harmony with nature and the seasons the “Broka” products, apple juice, hazelnuts, a rather exceptional apple vinegar which is consumed above all for its virtues for health and the first guindillas of iparralde.
The gastronomic journalist Catherine Marchand also loves a little pintxo whose guidilla has always been the star, she shares her recipe with us.
