Julien Pasqualini, editor-in-chief at franceinfo, tells us about couscous. “The main ingredient is the semolina, which has been well soaked in butter. There are turnips, chickpeas, zucchini, lamb, beef balls, chicken, carrots, apples of earth and quite a bit of harissa.”
Couscous is a dish that reminds him of vacations spent in Marseille, with his grandmother of Tunisian origin: “It’s a dish that I find wonderful, both because it’s my grandmother and because it’s good. We invited the whole family. My grandmother had six children and therefore as many grand- kids and cousins, it was great.”
Julien also remembers gestures: “I remember her plunging her hands into the semolina to mix it with butter. I also remember that there was a lot of sauce and that we added more each time.” And to conclude: “I ate a lot of couscous hoping to find the taste of my grandmother’s and I never found it. I think I will always be disappointed with the couscous that I will eat until the end of my days .”
