Tuesday, March 1, is the entry into force of the obligation to indicate the origin of meat served in school canteens. Pierre-Yves Rommelaere is a chef in a college in Aude and a member of the collective Les pieds dans le plat, the first national network of technical experts for organic-local collective catering. He answers questions from students in the CM2 class at the Eustache-Varet elementary school in Violaines in the Hauts-de-France region.
