The Gougère is THE specialty that is the pride of Flogny-la-Chapelle and of all Icaunais! Essential for an aperitif, it is one of the symbols of gastronomy in the Yonne.
It was a certain Liénard, around 1800, who was the first to market this specialty made from a salty cabbage paste to which he added Comté cheese.
A simple recipe: Water, butter, flour, eggs and cheese, for a guaranteed effect!
The gougère now has its party!
For thirty years Flogny-La-Chapelle has celebrated the gougère on the third Sunday of May during a big party for everyone, young and old.
The Guild of Gougeres Gougères meet you on Sunday, May 15, 2022 for this beautiful feast of the gastronomic feast. The great spring chapter of the Guild of Goûteurs de Gougères will be held on this occasion, with an induction ceremony and a gougère competition open to all.

Sign up and you’ll cook in direct CIFA in Auxerre, Monday, May 9 between 9:30 a.m. and 11 a.m.. Your recipe will be submitted to a professional jury and you may represent the colors of France Bleu Auxerre on May 15 in Flogny la Chapelle!
