Tuesday, March 1 marks Mardi Gras. Some gourmands will take advantage of it to feast. Near Montpellier, in the Hérault, it is the escalette that invites itself to the table.

It is the story of a rebirth between a territory and a dormant culinary tradition. To wake her up, a couple of biscuit makers plunged back into the recipe for biscuits from her childhood: les escalettes de Montpellier (Hérault). The secret of this cookie dough has been passed down in the family for five generations.

A recipe that is exported internationally

The tradition of esscalettes dates back to the Middle Ages. At the time, these little waffles were cooked in cast iron molds over a wood fire. 700 years later, cooking is done with gas, but the gesture has not changed. In two years, the couple has doubled its production: already 180,000 cookies sold. In Montpellier, the biscuit is very successful. This local specialty also crosses borders. Belgium, Germany, England and soon Japan have already fallen for the esscalettes.
