Not all food price pressures stem from the war in Ukraine. Bird flu has led farmers to cull hundreds of thousands of poultry. Eggs and their derivatives therefore begin to run out, Wednesday, April 6.

From breakfast to dinner, multiple products contain the same ingredient: eggs. Their price has skyrocketed, sometimes he has been doubled. In a factory located in Morbihan, employees are paid to break eggs, around one million a day. “These eggs are then separated, the white on one side, the yolk on the other”explains Sylvain Relandproduction director. However, the eggs are becoming fewer and fewer.

In question, the avian flu epidemic in France. “There were about three million hens that were slaughtered in Pays-de-la-Loire and other French regions because of avian flu”says Loïc CoulombePresident of the National Union of Industrialists. Rising prices are penalizing pastry chefs and ice cream parlors. “In three months, it has increased by 11%”notes one of them. Eggs are essential for its cakes and ice cream. Nevertheless, he refuses to increase his prices for now.
