Sunflower oil is becoming scarce in France, especially for food professionals. Ukraine is the world’s largest producer. Wholesalers are starting to ration sales, and some restaurateurs are now using beef fat for their frying.

In Limoges (Haute-Vienne), on the shelves of a food supplier and wholesaler for catering professionals, sunflower oil in a 25-litre can is out of stock. “With respect to our customers, we ration them, unfortunately, in order to be able to provide service to as many customers as possible”confides Michaël Brethot, manager of the specialized brand. 80% of the world’s sunflower oil production comes from Ukraine and Russia. The liter of sunflower oil has increased by 17% in just a few weeks, which could increase the rating for fries lovers.

Some restaurateurs have found an alternative: beef fat. “We were warned by our suppliers a little over a month ago, who invited us not to overstock to avoid causing the shortage more quickly. We anticipated, eliminated all our fried dishes and we passed on beef fat, to be able to keep our fries à la carte”explains Léo Semblat, manager of a restaurant.
