The price of flour increases, so inevitably the baguette will also increase. Stocks are running out, and it is necessary to prevent basic necessities from giving rise to speculation.

Some wonder about this evil which could also be good. Sunflower fields, like palm fields, are not necessarily good for the health of the planet. In addition, a boom in rapeseed oil could allow farmers to diversify.

To illustrate this sequence, Thierry Marx offers a recipe for onion soup.

Ingredients for eight:

600 g onions, 150 g lard fat, 2 tablespoons flour, 1 bouquet garni, 200 g stale bread, 250 g grated Gruyere, 4 egg yolks, 4 tablespoons Madeira, 2 liters of beef broth (a cube with water can be used).

Preparation :

Peel the onions, cut them in half, and finely chop them; brown them in lard in a pot until brown (you can add a pinch of sugar to help caramelize). Add the flour, mix and cook like a roux.

Add the bouquet garni, deglaze with the Madeira, moisten with the broth, and leave to cook (a little trick: bring to the boil on the fire, and finish cooking in the oven).

Meanwhile, cut the stale bread into cubes. Place these croutons in a greased skillet to brown them, place them on a rack, and sprinkle them with the grated cheese. Serve the soup in bowls, and top with the cheese croutons.
