Are there dysfunctions in the food industry? A legitimate question after a series of recalls of products manufactured by large groups such as Nestlé, Ferrero and Lactalis.

Raw milk cheeses from the Lactalis group were withdrawn from sale on Wednesday April 6 because they could carry Listeria bacteria. A recall which follows those of Buitoni pizzas, likely to transmit the dangerous bacterium E.coli, and Ferrero chocolates, possibly carriers of salmonella. Some consumers are puzzled.

Food safety for consumers depends on a European regulation, and each State is responsible for monitoring. In France, the repression of fraud is supposed to regularly check the production sites of manufacturers and craftsmen, and inform the health authorities. The food manufacturers themselves have to carry out numerous checks. Unfortunately, according to consumer associations, self-monitoring has become the rule, and monitoring by theState, an exception.
