As the main course of the take-out menu, you have to choose between veal blanquette and squid ink risotto with candied squid, both of which are preceded by a cream of celeriac and chestnuts, then followed by a Clementine verrine, mascarpone and meringue. The whole thing, at $48 per person, is ready to reheat and assemble at home. We pick it at the Butterblume, on February 12, between 11 a.m. and 6 p.m.
