French gastronomy owes a proud candle to the “Mothers”. Not mothers, but those who cooked for the big bourgeois houses and who subsequently opened their own restaurants, especially in Lyon.

In January, the Paloma restaurant pays tribute to the generous and invigorating cuisine of Mère Brazier. The first woman to obtain three stars in the Michelin Guide, in 1933, Eugénie Brazier had none other than Paul Bocuse as a clerk.

On the take-out menu, there will be a starter of Cinzano ham and leeks with vinaigrette, main courses of historical compositions such as monkfish à la bordelaise with mashed potatoes, veal blanquette with mushroom rice, navarin of lamb and forest cod with black truffle. The dessert will be a chocolate mousse.
