Since the beginning of the year, sales of fish and meat have been falling in supermarkets. At the same time, those of eggs are on the rise.

With inflation, the egg becomes an essential product, Thursday, October 6th. Its sales have been on the rise since the summer. “Meat is so expensive that we will no longer go for eggs”, explains a woman. In 2022, fish and meat sales in supermarkets are down 12.4% and 10.6% respectively. On the other hand, those of eggs are up, by 4% for organic eggs and 187% for low-end ones.

With the growing demand for eggs, customers are scrambling. “In some stores, we used to sell 20 packets, now we sell 30”, notes Servane Lagrève, producer of “coquelin eggs”. Rising prices are not the only argument in favor of eggs, since cold cuts and red meat have negative impacts on health. Egg production could be disrupted, as more than 4 million laying hens have been culled since December 2021 due to bird flu.
