Treat yourself to Quebec strawberries with this rustic tart that is as comforting as it is decadent. Accompanied by a scoop of ice cream, it is simply synonymous with absolute happiness!

Rustic Strawberry Basil Tart

Preparation: 35 minutes
Refrigeration: 30 minutes
Cooking time: 40 minutes
Yield: 4 to 6 servings

Ingredients for the dough

  • 1 3/4 cup (430 ml) unbleached white all-purpose flour
  • 1/3 cup (80 ml) brown sugar
  • 1/2 tsp. teaspoon (2.5 ml) salt
  • 3/4 cup (180 ml) cold unsalted butter, cut into cubes
  • 2 tbsp. tbsp (30 ml) very cold water
  • 1 egg

Ingredients for the filling

  • 5 cups (1.25 L) hulled strawberries, cut into quarters
  • 1 C. teaspoon (5 ml) lime zest
  • 2 tbsp. tbsp (30 ml) chopped fresh basil
  • Pepper from the mill, generously
  • 1/3 cup (80 ml) hulled and sliced ​​strawberries
  • 1/3 cup (80 ml) maple syrup
  • 1 C. teaspoon (5 ml) vanilla extract
  • 1 pinch of salt
  • 4 tbsp. tsp (20 ml) ground white chia seeds *

*In this recipe, white chia seeds are favored primarily for the overall visual appearance of the filling. However, it is entirely possible to opt for ground black chia as an alternative.

Ingredients for gilding

  • 1 egg yolk
  • 1/2 tsp. tsp (2.5 ml) water
  • Brown sugar, to taste

Preparation of the pdough

  • 1. Line a large baking tray with a silicone baking mat. To book.
  • 2. In a food processor, mix the flour, brown sugar and salt until you obtain a floury texture. Add the butter and pulse. Add the water and egg, then mix to obtain the consistency of a paste.
  • 3. Using your hands, form a ball with the dough obtained in the previous step, cover with reusable plastic wrap and refrigerate for about 30 minutes.
  • 4. On a floured work surface, roll out the dough to form a circle of approximately 14 inches.
  • 5. Gently place the dough on the baking sheet. To book.

Preparing the filling

  • 6. Preheat the oven to 180°C (350°F).
  • 7. In a large bowl, add the 5 cups strawberries, lime zest, basil and pepper. To book.
  • 8. In a small blender, blend the 1/3 cup of strawberries with the maple syrup, vanilla and salt until smooth. Pour into a small bowl and add the chia seeds. Mix and let sit for about 5 minutes. Pour the sauce into the large bowl containing the strawberries and coat everything well.

Final steps

  • 9. Pour and spread the strawberry mixture in the center of the dough, taking care to leave free space around the filling (about 2 inches all around). Fold the edges of the dough over the filling, leaving the center uncovered.
  • 10. In a small bowl, combine the egg yolk and water. Using a brush, gently brush the dough. To taste, sprinkle the dough with brown sugar.
  • 11. Bake for 35 to 40 minutes, until the strawberries are cooked and the dough is golden brown.
  • 12. When serving, garnish with chopped fresh basil (to taste). Enjoy with vanilla ice cream, if desired.
