Since Monday, August 29, the state has authorized the food industry to change the recipe for certain dishes containing eggs or duck, due to the shortage caused by avian flu.

With oil and egg supply tensions as well as avian flu, the state authorizes the agri-food industry to change its recipes, Monday, August 29, without this necessarily being written on product labels. “There is deception on the product, anyway”, observes a man. The authorization applies to eggs and poultry. Thus, a pot of duck rillettes may contain chicken.

For inhabitants of the Gers, this is inconceivable. “We are a duck producer, we are not a chicken producer, we don’t put anything else in duck rillettes”, says Joël Valentin, producer. In the event of a recipe change, manufacturers must stick a label on the product specifying the exemption. Large retailers must also display it. “For once, it’s a problem since we have recipe changes that relate to the basic ingredient”explains Olivier Andrault of the UFC-Que Choisir association.
