Too many people still believe that all German Rieslings are sweet. It’s wrong ! I could also have put this wine in the “classic” category, because it has everything of a German Riesling.

Developed by a family house established for more than 400 years, and one of the first to work in biodynamics in the country, this Dr Bürklin-Wolf Riesling Trocken Pfalz 2020 has an incredibly charming nose, very aromatic, fruity and floral, with notes of peach, lime, white flowers. Dry (trocken), carried by a lively acidity, but coated by a ripe and juicy fruit, it offers a dapper mouth, full of vitality. Light bitters with accents of zest point to a long finish that calls for a second glass. Of immense drinkability, it is nevertheless also a good candidate for the cellar. And for the table! Squash ravioli with sage, seared scallops with rosemary, sushi.
