In Saint-Cannat, in the Bouches-du-Rhône, was held Sunday January 20 the third edition of the truffle day. It is a pleasure, it is true, which is sometimes expensive. Precisely, to make everyone enjoy it, food stands were offered to passing visitors.

The truffle is a mushroom that makes you dream. Fresh, canned or cooked, it is the star of a Provençal market located in Saint-Cannat in the Bouches-du-Rhône. To go on a treasure hunt, a family even has a dressage project. “We have a dog that we would like to train for leisure with truffles, and then we like to eat it, it’s a good product”, indicates a passerby. The product is cooked under the hall by a local chef. A very simple truffle brouillade recipe.

“We grated it, we soaked it in eggs so that all the aromas come out, and we finish it with a little bit of fresh cream, salt, pepper”, describes Olivier Mazza, to cook. There’s nothing like truffle shavings to take eggs out of their ordinary. Count 800 euros per kilo, directly from the producers. But in commerce, the black diamond of gastronomy can sometimes cost double.
