Olivier, groom, prepares a horse from 7 a.m. He untangles the animal’s hair, cleans it with five different brushes and installs the seal, bridle and reins. Each animal is pampered for more than a quarter of an hour. Every day, two uniformed squires come to train the animals prepared by Olivier Prévost for galas and competitions.
