Discovering the citrus fruits of the nurseryman Michel Dufau in Eugénie-les-Bains

Nearly 190 varieties of citrus fruits

Calamondin, pomelo, bergamot, yuzu, kaffir lime, orange, lemon, kumquat, Buddha’s hand, lime, clementine, mandarin… to name but a few varieties. For each tree purchased, personalized advice and a culture sheet to avoid setbacks. We grant you, it will be difficult to know where to turn. You will choose the variety that suits your land or the “favorite” variety that may need to be kept in a pot and pampered, but rest assured Michel Dufau will always be there to inform you, even by telephone. Who has never dreamed of having at home a yuzu, a kaffir lime, a clementine or even a beautiful variegated orange tree quite simply.

What about citrus cuisine then?

Our producer nurseryman is called upon by chefs such as the three-starred chef Michel Guérard, not to mention him, or even by pastry chefs. Individuals also know in which season to find this or that citrus fruit to make cakes, jams, sweet/savory dishes. It is always good to go for a walk under the greenhouses of Michel Dufau.
Think for example of using kaffir lime and its leaves in the kitchen, Michel put it in his pancakes for example.

Combava is Michel’s favourite, he loves it, he puts it everywhere and of course cooks it in jam. Kaffir lime or even yuzu, Meyer lemon, bigarade, blood orange, citron jams, etc. One fruit per jam to prevent one fruit from overpowering another by mixing them.
